Hi there and Happy Holidays!
My sweet friend Kelly from The Tattered Pew had the brilliant idea of gathering together some buddies and our favorite cookie recipes just in time for the holidays! If you’re coming from Jordan’s House Becomes Home Interiors then I know your mouth is already watering! So go ahead and get a napkin and pre-heat that oven to 350′ 😉 because know it’s my turn to share my Pumpkin Oatmeal Chocolate Chip Cookie recipe!
Pumpkin Oatmeal Chocolate Chip Cookies
It’s a pretty simple once you have all your ingredients together but I snapped some pics just for fun! You simply combine all the dry ingredients then combine the wet. After that the biggest challenge is to not eat the dough! Lol!
Pumpkin Oatmeal Chocolate Chip Cookies
Drop a tablespoons worth of dough evenly spaced out on your cookie sheet. I swear by parchment paper! It just makes life easier and less messy! This recipe will make several dozen cookies! I always freeze some of the dough for later if I don’t want to make a huge batch!

We like our cookies soft and gooey around here so I bake them until there’s no dough on my toothpick. They’ll feel very soft but they firm up once you let them cool a bit.
Pumpkin Oatmeal Chocolate Chip Cookies
The cookies almost remind me of an extra sweet granola bar, and the pumpkin in them is very very subtle. You can even leave that out if pumpkin isn’t your thing or you just want to mix it up. These cookies are dangerous around our house! If I make a full batch around the holidays I try to get them out of the house and shared quickly! Lol! And they’re always a crowd pleaser wherever I take them!
